Log No.2 : Butterfly Fillets, Geography and Rock Salmon



Today I learnt that a Rock fish is what used to be called a Rock Salmon but now you can't call it a Rock Salmon because it isn't officially a Salmon.












Today I learnt that when something has been caught in the N.E Atlantic, that means off the UK coast. A simple lesson in Geography.



Today I learnt how to properly butterfly fillet a fish. This is when the fish is filleted by removing the spine and insides but leaving the head and tail on, joined by just the two fillets of flesh.

Log No.1: Sharks, Monkfish and Stingray




Today I learnt that the sharks we sometimes get for the display are caught off the coast of Cornwall.








Today I learnt how to skin a Monkfish tail.










Today I learnt that you can eat Stingray because we had some on our display for the first time. It's similar to Skate in the way that you prepare it.
